Yields: 4 Servings



  • 1 carrot, grated
  • ¼ red cabbage, shredded
  • 1 large handful parsley, washed, leaves picked
  • 2 scallions, green part only, sliced
  • 3-4 tbs mayonnaise
  • Salt and pepper


  • In a large bowl, mix the carrot, cabbage, parsley and scallions together. Stir through the mayonnaise until well combined. If the mixture is too thick, you can add more mayonnaise or some lemon juice to thin it out.
