Ingredients
- 1 carrot, grated
- ¼ red cabbage, shredded
- 1 large handful parsley, washed, leaves picked
- 2 scallions, green part only, sliced
- 3-4 tbs mayonnaise
- Salt and pepper
Method
- In a large bowl, mix the carrot, cabbage, parsley and scallions together. Stir through the mayonnaise until well combined. If the mixture is too thick, you can add more mayonnaise or some lemon juice to thin it out.

What is an alternative to red cabbage?
You could use white cabbage or wombok cabbage.
My doctor gave me a SIBO printout with Phase 1 Semi-Restricted foods, and it says no onion. This recipe has scallions. ??

Yes! Scallions are low fodmap when you eat the green part (just avoid the white part). You’ll see on the hand out that they’re included in the SIBO Bi Phasic Diet from Phase 1 Restricted (they’re called ‘spring onions’ here in Australia). We’re just getting you to avoid regular onions like brown, red and white onions.
