These SIBO friendly shrimp tacos are ready in minutes and perfect for a quick lunch or light dinner while being gut friendly and gluten free.

Ingredients
- 1 tbs olive oil
- 14 oz shelled raw shrimp
- 2 limes
- 1 long red chili, finely chopped (optional)
- 2 baby romaine lettuce, leaves separated
- 1 pint cherry tomatoes, halved
- 1 avocado, diced
- 1 cucumber, diced
- Salt
- Pepper
Method

Add the olive oil, shrimp, juice and zest of one lime and chopped chili (if using) into a bowl. Season with salt and pepper. Stir to combine.
- Heat a large frying pan over medium-high heat. Add the shrimp and cook for 3-4 minutes or until the shrimp are cooked through and opaque. Remove from the heat and set aside.
- On a large plate, arrange the baby cos lettuce leaves. Divide the cherry tomatoes, avocado and cucumber between them. Drizzle with lime juice and season with salt and pepper. Top with the hot shrimp and enjoy immediately.
Note
- To make this suitable for the Restricted phase of the SIBO Bi Phasic Diet, omit the avocado. To make this Low FODMAP, omit the avocado and reduce the cherry tomatoes to 45g per serving.
