A simple yet sensational SIBO appetizer for Christmas or any special occasion. The humble shrimp (prawn) cocktail is elevated to new levels in this delicious recipe. It only takes minutes to put together but will seriously impress your guests. This recipe serves 8 but you can halve the quantities if only serving 4 people.

Shrimp Cocktail


  • 16 cooked and peeled jumbo shrimp
  • 2 ripe avocados
  • 2 large tomatoes, deseeded and diced
  • 3 limes (4 tbs lime juice, the rest cut into 8 segments for garnishing)
  • 4 tbs olive oil
  • Salt and pepper to taste
  • 2 handfuls salad greens, roughly chopped
  • 16 teaspoons mayonnaise
  • Dill for garnishing
  • Caviar for garnishing (optional)


  • Cut each shrimp into 3 or 4 pieces. Place the shrimp, avocados and tomatoes in a bowl. Drizzle with the lime juice and olive oil. Lightly season with salt and pepper. Lightly mix being careful not to damage the avocado.
  • Place some salad greens in the bottom of 8 pretty cocktail glasses.
  • Scoop in the shrimp mix, evenly distributing it between all glasses.
  • Top with 2 teaspoons of mayonnaise per glass.
  • Garnish with a sprig of dill, a wedge of lime and a sprinkle of caviar (if using).
