Passionfruit parfait recipe

A super quick SIBO friendly Passionfruit Parfait recipe, this is great for those times when you want to make a dessert but are short on time.

Like so many of us, Rebecca often finds herself time poor, so she developed this lovely refreshing Passionfruit Parfait around her favourite fruit.

It really is very easy and very quick to make, with a crunchy toffee nut crumble on the base, coconut yoghurt centre and a zingy passionfruit jelly on the top, this is simplicity itself.

The toffee nut crumble really does taste indulgent and will leave you feeling like you have eaten a decadent treat. How about trying out for your next dinner party and spending all that extra time catching up with friends?

Serves 4
Classification: Gluten-free, dairy-free, semi-restricted phase

Ingredients
Nut crumble
40 pecans, chopped
40 macadamia nuts, chopped
2 tbs coconut oil
2 tbs honey
Filling
1 cup coconut yoghurt
Passionfruit jelly
2 Passionfruit
1 tsp gelatine
Method
First, make the nut crumble. Melt the coconut oil and honey in a frying pan.
When bubbling, add the nuts, stirring to combine. Pour the mixture onto a piece of baking paper and set aside to cool. Once cool enough to handle, chop the nuts finely. Set aside.
Next, make the Passionfruit jelly. Scoop the pulp out of the Passionfruit into a small bowl. Mix the gelatine with ÂĽ cup hot water until well combined. Pour the water into the Passionfruit pulp and stir to combine. Chill slightly.
To assemble, place the nut crumble in the bottom of four glasses. Divide the coconut yoghurt evenly between the glasses then top with the Passionfruit jelly.
Place in the fridge for 1 hour or until set.
