The zucchini noodle salad with lemon paprika prawns (shrimp) is a quick, easy and delicious salad while on your SIBO diet. It's a wonderful lunch or light dinner during the warmer summer months. Don't like zucchini? Swap it out for another vegetable that you like and can spiralise. If you can tolerate them, you can bulk out this salad with gluten free rice noodles. Not a fan of prawns (shrimp)? Simply swap out with your preferred protein. Grilled chicken or turkey works well. If you want to bulk out this meal, why not add a side of Duck Fat Roast Potatoes or Loaded Potato Skins.

Ingredients
- 12 jumbo shrimp, shelled and deveined
- 4 tbs garlic infused olive oil
- 1 tsp ground sweet paprika
- Zest and juice from 1 lemon
- 2 cups freshly spiralized zucchini
- Salt and pepper to taste
Method

Place the shrimp, 1 tablespoon of the garlic infused olive oil, paprika, lemon zest and 1 tablespoon of lemon juice in a glass or ceramic bowl and set aside for 5 minutes. l

Heat a skillet over medium-high heat. Add 2 tablespoons of the garlic infused olive oil to the pan then add the zucchini noodles. Cook, stirring frequently, for 1-2 minutes then remove from the heat.
- Add the remaining olive oil to the skillet then add the prawns and cook until opaque and cooked through.

Divide the zucchini noodles and shrimp between 2 bowls. Drizzle with lemon juice and season with salt and pepper. Enjoy while warm or refrigerate in an airtight container and enjoy cold.
