Enjoy this delicious tuna niçoise salad for a speedy lunch or light dinner on your SIBO, low FODMAP or low fermentation diet. Recipe also gluten and dairy free. To make suitable for the SIBO Bi Phasic Diet, swap tuna for salmon.

Ingredients

  • 2 large handfuls arugula
  • 1 large tin of tuna (preferably in olive oil)
  • 2 boiled eggs, halved
  • 1/2 red pepper, sliced
  • 1/2 green pepper, sliced
  • 1 small cucumber, sliced
  • 2 tbs olive oil
  • 2 tbs fresh lemon juice
  • Salt
  • Pepper

Method

  • Place the arugula, tuna, peppers and cucumber in a large bowl. Drizzle over the olive oil and lemon juice. Season with salt and pepper. Stir to combine.

  • Divide between two plates and top with two egg halves per plate (1 egg per person). Enjoy immediately.

Note

  • To make this suitable for the SIBO Bi Phasic Diet, swap the tuna with salmon.
