This salmon and ruby grapefruit salad is perfect for the warmer months. Light yet full of bold citrus flavours, it's a delicious SIBO meal.

Ingredients

Salad

  • 1 tbs olive oil
  • 2 salmon fillets
  • 1 ruby grapefruit, cut into segments
  • 20 almonds, roughly chopped
  • 2 large handfuls mixed salad greens
  • Salt
  • Pepper

Dressing

  • 2 tbs olive oil
  • 2 tbs lemon juice
  • 2 tsp seeded mustard
  • Salt
  • Pepper

Method

  • Season the salmon with salt and pepper. Heat a frying pan over medium heat. Add the olive oil then the salmon fillets. Cook for a few minutes on each side until cooked to your liking. Remove from the heat and set aside. When cool enough to handle, flake/cut into smaller pieces.
  • Place the remaining salad ingredients in a bowl.

  • Mix the olive oil, lemon juice, mustard, salt and pepper in a small bowl then drizzle over the salad.

  • Divide between two plates and top with the salmon pieces. Enjoy immediately.
