Ingredients

  • 1 tbs chia seeds
  • ¼ cup tinned coconut milk (no gums or thickeners)
  • 4 tbs water
  • 1 kiwi fruit
  • Mint leaves, for garnish (optional)

Method

  • Place the chia seeds in a glass or jar. Stir through the coconut milk and water. Set aside for 20 minutes while the chia seeds bloom.
  • When ready to serve, top with mashed kiwi (or slices of kiwi) and a few sprigs of mint.
