- 1 tbs chia seeds
- ¼ cup canned coconut milk (no gums or thickeners)
- 4 tbs water
- 1 kiwi fruit
- Mint leaves, for garnish (optional)
Method
- Place the chia seeds in a glass or jar. Stir through the coconut milk and water. Set aside for 20 minutes while the chia seeds bloom.
- When ready to serve, top with mashed kiwi (or slices of kiwi) and a few sprigs of mint.

This is a low histamine recipe so the first priority of it is to support someone with histamine intolerance. Chia, coconut and kiwi fruit are all included in the SIBO Bi Phasic Diet, which this recipe also supports. You might be following a different SIBO diet protocol so you can always look at the top of the page to see the diet protocols a recipe is suitable for. You can also filter by diet type to see the recipes that suit your specific protocol.

How are chia seeds allowed in this recipe given that they are in the “Avoid” column in phase 1 and phase 2 of the biphasic histamine diet?

Thanks for your question about chia seeds. Chia seeds are considered low histamine when following a standard low histamine diet. and in the most recent update to the regular SIBO Bi Phasic Diet protocol by Dr Jacobi, were included. When Dr Jacobi originally released the Bi Phasic Diet, she didn’t include chia seeds. However, when she revised the protocol in 2022, she did include them from Phase 1 Semi Restricted (serving 2 tbs). The low histamine diet handout was released in 2018 so given the update to the regular SIBO diet since then, and the low histamine status of chia seeds, I included them in this recipe. However, if you know you react to them, please feel free to avoid them.
