Metric
Ingredients
- ½ cup water
- ¼ cup jasmine or basmati rice
- 1 tbs coconut oil
- 5oz ground organic beef
- 1 tsp freshly grated ginger
- 1 tsp freshly grated turmeric (or 1 tsp ground turmeric)
- 1 cup broccoli florets
- Handful of cilantro
- Salt and pepper, to taste
Method
- Bring the water to the boil in a small saucepan. Add the rice. Add a sprinkle of salt. Bring to a boil then cover with a tight-fitting lid. Immediately reduce the heat to very low. Cook, undisturbed, for 20 minutes.
- When the rice has 5 minutes left to cook, prepare the remaining ingredients.
- In a saucepan, cook the broccoli until al dente or to your preference. Drain and set aside.
- Heat a wok or frying pan until smoking. Add the coconut oil, ground beef, ginger and turmeric. Stir constantly until the beef is cooked through.
- To serve, place the rice on a plate and top with the beef. Add the broccoli and sprinkle with the cilantro. Season with salt and pepper and enjoy immediately.
Notes
- Soy sauce is fermented and therefore high in histamines, which is why it is not included in this recipe.
