Ingredients
Smoothie
-
½ cup coconut yoghurt
-
½ cup almond, coconut, hemp or rice milk
-
½ cup frozen berries
-
½ kiwi fruit
-
¼ cup gluten free oats
-
2 tbs chia seeds
-
1 scoop protein powder, optional
Toppings
-
½ kiwi fruit
-
1 tbs pumpkin seeds
-
1 tbs shredded coconut
Method
-
Place all smoothie ingredients in a high powered blender. Reserve a few berries and 1 tablespoon of coconut yoghurt for the topping. Blitz until well combined, smooth and creamy.
-
Pour into a bowl then top with the remaining kiwi fruit, pumpkin seeds and shredded coconut. Top with the reserved coconut yoghurt and berries.
-
Enjoy immediately while the smoothie is still quite firm.
Note
-
If you choose to use a protein powder, look for one that contains less than 4g fibre, 10-15g protein and 0g sugar per serve and uses an appropriate sweetener for your diet protocol. I like to use Drink Wholesome powders as they contain only a few ingredients and are often well tolerated.
