Enjoy this fish broth, where the flavours of the sea come alive! Perfect on its own or as the base for a fish or seafood soup on your SIBO diet.

Ingredients

  • 3.5lbs white fish bones
  • 10 scallions, green part only, chopped
  • 1 fennel, chopped
  • 2 sticks celery, chopped
  • 1 carrot, chopped
  • 1 bunch parsley
  • Small handful dill
  • 3 bay leaves
  • 1 tsp black peppercorns
  • 1 tsp salt
  • 3.5L water

Method

  • Rinse your fish bones under running water then place them and all other ingredients in a large stock pot. Slowly bring to a simmer, then cook on a low heat for 30-60 minutes. Do not boil, as this will make your stock turn cloudy.

  • Strain the stock through a fine mesh sieve, discarding the solids, then use immediately in a recipe, or enjoy on its own.

  • It can be stored in the fridge for 1 day or in the freezer for up to 3 months.

Note

  • To make this Low FODMAP, omit the celery.
