You would never know this creamy decadent mocha mousse was free from dairy, egg and refi ned sugar. It is so rich and fi lling that you only need a little to feel completely satisfi ed. With desserts like this, you won’t feel deprived on your SIBO diet.

Ingredients
- 1 ripe avocado
- 2 tbs raw cocoa powder
- 1 oz strong espresso
- 3 tbs raw organic honey
- 1 cup coconut milk, no thickeners or gums, chilled for at least 6 hours
Method
- Place the avocado, cacao powder, espresso and honey in a food processor and blend until creamy.
- Changing to a whipping blade, add the firm coconut cream from the tin. Don’t use the watery liquid at the bottom. This can be kept for another recipe. Whip until light and fluffy.
- Spoon into bowls and refrigerate for 1 hour before serving.
