Method

Heat oven to 340F. Place whole sweet potato onto a baking sheet and into the hot oven. Cook for 20-30 minutes depending on size. Test for doneness by inserting a knife into the centre – it should be soft all the way through. Remove when cooked and cool slightly.

Remove sweet potato skin with hands (be careful of the steam) then mash with a fork. Add olive oil, salt, pepper and parmesan. This mash can be made in advance and reheated in a pot or microwave.

  • Herbal Leaves H1qygbnam

Heat oil in a large heavy pot. Add parsnip, celery, carrot and fennel. Cook until soft but without browning.

  • Herbal Leaves H1qygbnam

Add beef mince. Using a wooden spoon, break mince apart to prevent clumps forming.

  • Herbal Leaves H1qygbnam

Cook meat through then add tomato pulp. Bring to the boil then reduce heat, stirring frequently for 15-20 minutes. Add grated zucchini and seasoning.

  • Herbal Leaves H1qygbnam

Serve with sweet potato mash and top with fresh herbs.
