Everyone loves a tasty bolognese meal and now you can enjoy it on a low FODMAP diet. Recipe by Charlotte Miller from Food & Joy.

- 2 tbs olive oil
- 1 medium parsnip, grated
- 1 x 4 inch stalk celery, finely chopped
- 1/2 bulb fennel, finely chopped
- 1 medium carrot, grated
- 7 oz ground beef
- 14 oz tomato passata
- 1 medium zucchini, grated
- Salt and pepper to taste
- 1 small sweet potato (1/2 cup cooked serving per person)
- 1 oz olive oil
- Salt and pepper to taste
- 2 oz parmesan grated
- 1/2 cup basil or parsley, chopped
Method
- Heat oven to 340F. Place whole sweet potato onto a baking sheet and into the hot oven. Cook for 20-30 minutes depending on size. Test for doneness by inserting a knife into the centre – it should be soft all the way through. Remove when cooked and cool slightly.
- Remove sweet potato skin with hands (be careful of the steam) then mash with a fork. Add olive oil, salt, pepper and parmesan. This mash can be made in advance and reheated in a pot or microwave.
- Heat oil in a large heavy pot. Add parsnip, celery, carrot and fennel. Cook until soft but without browning.
- Add beef mince. Using a wooden spoon, break mince apart to prevent clumps forming.
- Cook meat through then add tomato pulp. Bring to the boil then reduce heat, stirring frequently for 15-20 minutes. Add grated zucchini and seasoning.
- Serve with sweet potato mash and top with fresh herbs.
