Enjoy this berry chia parfait for breakfast, a snack or even dessert! This delicious vegan treat is suitable for a SIBO and Low FODMAP diet.

8 tbs chia seeds

1 cup coconut milk (canned, no thickeners or gums)

2 tbs honey (use maple syrup if Low FODMAP or vegan)

2 cups mixed berries (eg strawberries, raspberries, blueberries)

2 tbs Vanilla and Cinnamon Granola (optional)

Few mint springs for decoration
Method

Mix the chia seeds, canned coconut milk (reserving a few tablespoons) and honey together in a bowl.
- Place the berries (reserve some for decoration) and the remaining coconut milk in a blender and blitz until combined.
- Place a quarter of the coconut chia mixture in the bottom of 4 glasses, then stir the remaining mixture into the berry purée then carefully add it to the glass jars (trying not to mix the two colours).
- Put in the fridge to set for an hour (or overnight).
- When ready to serve, top the parfaits with the remaining berries and a sprinkle of granola (if using) and a sprig of mint for decoration.
