A simple yet truly delicious beef and winter vegetable soup is perfect for your SIBO diet while easy on sensitive stomachs.

  • 4 tbs olive oil
  • 1.5 lbs stewing beef, cubed
  • 6 scallions, green part only, chopped
  • 3 carrots, sliced
  • 2 quarts beef stock
  • 2 potatoes, diced
  • 10 oz parsnip, diced
  • 2 tbs tomato paste
  • 2 bay leaves
  • 2 sprigs thyme
  • Salt
  • Pepper


  • Heat a heavy bottomed pot over a medium heat. Add 2 tablespoons of olive oil, then add handfuls of meat at a time. Brown all sides of the cubes of meat. The more caramelized and browned you can get the meat, the more flavor some your soup will become. Remove each batch and set aside on a plate, then repeat until all of the meat has been browned.

  • Add another 2 tablespoons of olive oil into the pot and add the scallions and carrots. Cook for a few minutes, then pour in the beef stock.Make sure you scrap all the brown bits off the bottom of the pot, as these are full of flavor. Add the beef, potatoes, parsnip, tomato paste, bay leaves and thyme. Bring to a simmer, then cover and cook for 1 hour or until the beef is tender and the vegetables are very soft. Taste and season with salt and pepper accordingly.

  • Divide between 4 large soup bowls and enjoy.


  • To make this suitable for the Semi Restricted phase of the SIBO Bi Phasic Diet, omit the potato.
