If you're looking for a simple yet really satisfying lunch or dinner featuring succulent snapper and roasted potatoes, this recipe is for you! It's really easy to make yet looks impressive so can be served at a dinner party or for a special meal.

Snapper
- 2 whole baby snapper, cleaned
- 1 lemon, thinly sliced
- Salt and pepper
Lemon roast potatoes
- 2 potatoes, chopped into large pieces
- 2 tbs garlic infused olive oil (or use regular olive oil if not tolerated)
- 1 lemon, sliced
- Salt and pepper
Side salad
- 2 handfuls salad leaves
- 4 cherry tomatoes, sliced
- 1 tbs olive oil
- 1 tbs freshly squeezed lemon juice
- Salt and pepper
Method
- Pre-heat the oven to 350F.
- Place the potatoes, olive oil, lemon slices, salt and pepper in a large bowl and toss to combine.
- Line a baking sheet with parchment paper. Place the potatoes on the sheet then place in the oven and roast for 30 minutes, or until cooked through. Stir halfway through.
- Meanwhile cook the fish. Place each fish on a lightly oiled piece of aluminum which is large enough to wrap around each fish.
- Fill the cavity of each fish with the lemon slices. Season with salt and pepper.
- Tightly wrap the foil around the fish then place in the oven for 20 minutes. Check the fish has cooked through by piercing the flesh with a sharp knife. If it is completely opaque it is cooked through. Remove from the oven.
- While the potatoes and fish are cooking, you can make the side salad. Add the salad leaves, tomatoes, olive oil, lemon juice, salt and pepper to a bowl and toss to combine.
- When ready to serve, place the fish on two plates. Divide the roast potatoes and salad between the plates and serve immediately.
Note
- If you can't find whole snapper, substitute with another whole white fish.
